Brickwalk Tavern Opens in Fairfield, CT

Chef David Snyder and business partner Ted Vincent have combined their talents to open Brick Walk Tavern—a wonderful new eatery in Fairfield, CT that gets both front of house and kitchen elements just right.

A graduate of the Culinary Institute of America in Hyde Park, NY and veteran of the Livanos Family group of restaurants (Café Meze, Molyvos), Snyder is passionate about the cuisine he prepares and the ingredients he uses. “Tavern Classics” are really classics with a beguiling twist: Spaghetti & Meatballs are chicken and truffle meatballs over imported pasta with a lush wild mushroom pesto and porcini jus; New England Style Pot Pie is a flaky puff pastry shell filled with Main lobster, shrimp and bay scallops tossed with peas, potatoes, leeks and tomatoes; the Traditional Cubano includes marinated pork, gruyere cheese, garlic and Dijon aioli with house-smoked ham and shaved pickles. 

Then there are “Chef’s Inspirations:” delightful items such as a crisp Tuscan kale and Brussels sprout salad with hot polenta croutons, dried cranberries, and housemade lemon-truffle vinaigrette; Bourbon and spice smoked salmon over tiny poached potatoes, with pickled radish and onion, micro arugula, and a lemon yogurt drizzle; Shrimp and grits with smoky tasso gravy. Do not, under any circumstances, leave without having dessert. The individual strawberry shortcake, a biscuit filled with flash-roasted berries, vanilla bean whipped cream and a drizzle of basil syrup is amazing; the French Toast bread pudding coated with spiced sugar and pan fried, served with brown butter bourbon ice cream and smoked maple cornflake crumble is a sweet dream. The Ballpark Sundae, malted milk ice cream, Cracker Jack and nut butter fudge topped with a rich chocolate sauce is also reputed to be a house bestseller. 

Completely renovated and built out from two former restaurant spots, the tavern is comprised of several handsome, spacious dining rooms, including a private party room which can accommodate up to 18, and a chef’s tasting room for intimate, high-end, put-yourself-in-chef-Snyder’s-hands-for-a-memorable-multi-course-meal-and-wine events.
